I've been further researching the VAT situation as it relates to
non-UK customers, as it seems initial advice from HMRC may not have

This has no effect on UK customers so the majority of you can stop
reading now.
I sought a second opinion from HMRC and it came out in contradiction
to the first one. So, I sought a third opinion from a tax adviser
and I'm now going with the 2 to 1 winner. :)
If you're a non-EU customer, your services will be supplied
excluding VAT.
If you're a non-UK EU-based business that is registered for VAT in
your member state, and you can provide your VAT registration number,
your services will be supplied excluding VAT.
*** It's important in this case that you send your VAT registration
number to support(a)bitfolk.com as soon as possible so that we know
you're a VAT-registered EU business. ***
If you're a non-UK EU-based individual not registered for VAT then
your services will be supplied including VAT at the UK standard
rate.
I have updated the new pricing info above to reflect this.
