Dovecot install on the same server (as well as relaying the mail for that
mailbox to Exchange)?
yes, it's all very doable, but if you're going to send emails from the
postfix server directly to recipients on the public internet, make sure
your sending domain's SPF records include the IP address your postfix
server will appear to be sending from once egressing from your network. if
you haven't done this already, of course.
