Personally in this case¹ I would migrate to a new VPS. It was for
this sort of reason that we began to offer temporary VPSes for
migration purposes:

Even with the best luck in the world, this is likely to be a complex
upgrade and everything will be down while you're doing it. Being
able to move things across to a new host across the space of two
weeks seems preferable to me.

¹ I've done things like Debian etch->lenny->squeeze in sequence
without a reboot until the very end, but that was on a simple
single-purpose VPS and to be quite honest I trust Debian's
in-place upgrades a lot more.
