That looks to be the default as mine only has 1 CPU as well (not been
something I worried about). There isn't a listed option for additional
virtual CPUs, but if you have a requirement for more than one I suggest
that you email Andy (support(a)bitfolk.com) to discuss it.
Off-topic, but while I am emailing - I've noticed that my address for
this list has been harvested and received spam recently, so other users
may wish to change their subscribed email address or add relevant filters.
