I would say it is in your own interest to work out how to do a
kernel upgrade, if you're running Gentoo yourself. It's not really a
Xen/BitFolk issue (Xen support has been in upstream Linux kernel for
a long time now).
pygrub will try to boot whatever you put in your
/boot/grub/menu.lst.
