Did the upgrade to the 2.12-1ubuntu7.1 version of
grub-pc in the evening
of
the 14th Jan. I don't remember a problem
then, or since.
If your upgrades of grub-pc worked and apt update then full-upgrade
still works now then you don't need to do anything. Though I am confused
as to how you have avoided being affected by this.
What does:
$ sudo gdisk -l /dev/xvda
say for you, out of interest?
# gdisk -l /dev/xvda
GPT fdisk (gdisk) version 1.0.10
Partition table scan:
MBR: protective
BSD: not present
APM: not present
GPT: present
Found valid GPT with protective MBR; using GPT.

15 10240 227327 106.0 MiB EF00
You are making me doubt my memory of what happened two and a half weeks ago
- was there a complaint when it happened?? - but it's worked since and I
can update and reboot fine.
