If you don't want to run an authoritative DNS server on your VPS, you will
have to find somebody who can. Without correctly set up NS servers for your
domain, MX won't be possible. If you Google long enought, you will find
there are a number of DNS service providers out there that can do it from
free to a minimal fee. Running your own auth DNS using Bind or similar is
not as difficult as you might think, plenty people here doing just that.

mydomain.com AND smtp.mydomain.com?
There's no reason that
mydomain.com and
smtp.mydomain.com can't be
the same machine. If you run your own BIND, and host your own DNS
records, you _will_ need at least two systems (preferably on two
different networks) for running secondaries. Fortunately, Andy offers
this free as a service to his customers, as long as you're not hosting
too many domains.
However, if you're not familiar with the way that DNS works, and
don't want the hassle, I'd suggest, as Jan does, finding some third
party that can host your DNS records for you. Your registrar (who you
registered the domain through in the first place) will most likely
offer this service -- although you're not required to use them.
