Dom,
I unfortunately don't have much opportunity to use Ubuntu Desktop,
but I switched all my Debian servers over to Ubuntu Server about
2006ish, mostly because, at the time, things seemed to be available
in Ubuntu long before they were available in Debian (eg newer
versions of Apache, Perl, PHP, MySQL, etc). Debian had a super-slow
release cycle back then, and it was frustrating being stuck with old
packages unless you jumped to Debian's unstable or testing release
(which just didn't seem sensible for production servers).
I can't remember what it was exactly, but there was an incident a year
or two ago that made me think that one really should stick with
the tried and tested unless there's some particular reason otherwise.
