I'm just considering deploying a Trixbox SIP phone exchange within a
Bitfolk VPS. I was wondering if anybody else has used their VPS for
either Trixbox or Asterisk. If so, how did it perform please and how
many users do you think it would scale to before I hit the limits of
the
VPS please?

As a general rule VoIP is very time sensitive, which when using virtual
machines can be a problem.
I wouldn't expect you to hit any kind of disk, CPU or network limits
assuming you are doing little to no transcoding, but I would be worried
about the way a VPS does CPU time slicing which can lead to choppy sound.
My advice, suck it and see what the results are like. Just make sure you
firewall the box well, and perhaps setup fail2ban to also catch failed SIP
registrations as the last thing you want is someone running up a nice big
bill on your account.
