What changes would be required to the /etc/network/interfaces? - Boot your VPS, hope for the best, fix whatever you missed :) In terms of BitFolk doing it for you, hopefully you can see that the above is easier said than done, so this is essentially sysadmin consultancy. I'm guessing that's not what you're looking (to pay) for. The middle ground would be just migrating data and settings from your snapshot to the running VPS, which might be tedious but isn't going to require a possibly unwelcome learning process beyond knowing how to access your files.
