I can thoroughly recommend iRedmail as a fantastic way to quickly get up and running with Postfix, Dovecot, Roundcube, Amavisd, and a web control panel etc. Option of mysql or ldap database.
I have been running an iRedmail server for about 7 years now without issue.
Only thing is that it does need a newly installed operating system to install on.
