Thanks everyone for your help. I'll definitely look at those
greylisting rules and that fail2ban link for the exim rules (they don't
seem to be part of the default packaged version in Debian Wheezy).

Sorry for the short reply as only just got home. I'll reply to specific
emails tomorrow.
