I think just turning the dropdowns into radio buttons (so all are visible immediately) would solve the immediate UX problem.

This. At some point I probably  clicked to add a new contact, saw that
there were no obvious fields that linked to anything different that
wasn't in the main contact, and clicked Cancel.
