Thats probably the route I would recommend too - shouldn't be THAT difficult to recover providing recent disk activity hasn't been too serious
Andy - are the disk image files thin provisioned or thick provisioned (in VMWare speak)

Beyond mounting the disk read-only and doing a poweroff on the VM,
then me providing you with a disk image file for you to take to a
recovery expert, I don't think there's much that could be done.
