I now can see the email sent to 'root@exoco.net' and have now progressed to writing a procmail script.  I should be satisfied with my new server soon...

You're missing the fact that you appear to be connecting via Uni of Soton's resnet network, who block tcp/25 outbound and recommend you use smtp.soton.ac.uk for sending mail instead.  Best to do testing from outwith a traffic-managed/filtered network.
