Yes the problem is with the envelope not the content.  Gmail tool for header analysis very useful. 

Problem is that the default behaviour of exim4 is to use  (for root) an envelope-from address of

 root@aremiti36.vps.bitfolk.com

I added root:  chris@bristoltrees.space  to etc/email-addresses

with an SPF record for bristoltreees.space of 

v=spf1 a  ip6:2001:ba8:1f1:f09e::2 ~all

and now mail is being successfully delivered to gmail addresses again.

only downside so far is that bounces go missing?

You shouldn't do that. You shouldn't be using the domain
aremiti36.vps.bitfolk.com (or its newer replacement
aremiti36.vps.bitfolk.space) in any respect. Customers are expected
to use their own domain names and these bitfolk.space names are just
temporary for people who at the time have nothing better.

But in regard to the problem at hand, the recipient checks the
domain of the envelope sender. What was the envelope sender in the
mail you sent to gmail?

The SMTP reject response from gmail had [aremiti36.vps.bitfolk.com]
but I took that as being simply the reverse DNS and/or HELO name of
your mail server, not the domain it was checking SPF against. But I
don't know that for sure and maybe that is the case. It would be
easier if you could tell us what envelope sender you are sending
with.

If you don't know the envelope sender, it may be in your mail
server's logs at or around the point where gmail rejected your
email. If you still can't find that, send the same email to me at
andy@bitfolk.com and I'll see the envelope sender.
